Sweet Potato Tuna Cake Recipe

I love making zucchini fritters in the summer when there is a lot of zucchini available.  I have been craving them, but since it is winter I decided to use sweet potatoes instead. Almost every  time I go to the farmers market in the winter I grab a couple sweet potatoes to cook with.  They are great as fries or a hash and are always available at this time.

Lately my husband and I have been eating lots of tuna because its packed with protein and has fewer calories.  We are trying to stick with our healthy new years resolutions but it can be difficult when you eat a lot of the same food all of the time.  This recipe was my attempt to incorporate our normal tuna meal into something more substantial and yummy!

Sweet potato tuna cakes

Ingredients:

  • One sweet Potato, uncooked grated
  • 2 green onions sliced small
  • Tbs of fresh parsley chopped
  • One package of hickory smoked tuna (they come in small lunch portions next to the canned tuna at the grocery store)
  • 1/2 cup bread crumbs
  • 1/2 cup Chicken seasoned breading mix or flour
  • 1 egg
  • 1 tsp Turmeric
  • 1/2 tsp old bay seasoning
  • 1 tsp lemon pepper
  • 1/4 tsp Cayenne Pepper

For the sauce:

  •  1 tbs  Ranch dressing
  • 2 tbs Sour cream
  • 1 tsp Chipotle sauce

 

This recipe makes 4 patties.  First you need to grate the sweet potato, you will want to use a cheese grater to get it into small pieces so it cooks faster.  Now dice your green onions and chop your fresh parsley and add into a medium sized mixing bowl with the sweet potato.

Add in the remaining ingredients and mix until it forms a dough like consistency.  If it is too sticky you can add in more breading mixture, flour or breadcrumbs.  Form your patties, I make mine pretty thin so that they cook quickly, but you can make them thicker or thinner depending on how you like them.

Once your patties are formed you should dust the outside of them with the breading mix. Add oil to a pan and bring it up to temperature.  Once your oil is hot drop in the patties and let cook a couple minutes on each side until the outside is golden brown.

For the sauce take ranch dressing sour cream and chipotle sauce and mix together.  You can add more chipotle if you want more heat.  Another great sauce to try out with this is if you take one avocado and mix in a blender with 3 tbs sour cream.

Serve while still warm with dipping sauce, enjoy!
