There are always days when I would much rather eat a delicious appetizer than spend time making an elaborate dinner. Here is a simply and quick appetizer to make for such an occasion!
Skinny Spinach Dip and Flatbread
Lets start with the spinach dip, first boil some water. This will be to break down the spinach.
Take a bag of fresh spinach and either place in the water directly, or use a strainer and put this in the boiling water. Stir the spinach occasionally, once the spinach has broken down and flattened, remove and strain.
After spinach is removed and drained, chop finely and place in a mixing bowl.
Take 1 to 1 1/2 cups of unsweetened original greek yogurt and add this to the mixing bowl.
Chop up a clump of green onion, and three garlic cloves. Once these are chopped place in them in the mixing bowl.
Add 1tbsp of Lemon Juice, and salt and pepper to taste.
Mix all ingredients together, you are now done! If you want you can put this dip into a baking dish and grate cheddar cheese on top, bake at 400F for 10-15 minutes or until cheese is melted.
Now let’s make the flat bread.
Start with a handful of dough. I had my husband make this, you can make the dough however you like, I will not be describing the dough recipe.
Chop of whatever fresh herbs you have in your home. Unfortunately, I only had fresh oregano, I took a fair amount of this herb and chopped it up finely.
Take out a plate and pour a thin layer of olive oil over the plate.
Roll out your dough and rub both sides on the plate of olive oil, take your herbs and rub them all over both sides of the dough.
Now for cooking this I suggest grilling it right on the rack, however, I do not have a grill. I took a cast iron grilling skillet and heated it up on medium, then placed my dough on the pan, slowly cooking both sides.
Finally, cut your flatbread in triangles and enjoy your dip!
