Simple Berry Tea Cake

Every year my family spends some time picking blackberries, usually we turn this into jam. However, today I decided to make something a little bit different.

Black Berry Tea Cake

First, add butter and sugar to a bowl and beat until light.

Add the egg, vanilla and milk, beat for 2 minutes.

Sift flour, baking powder and salt into a second bowl.

Pour the wet mixture into the dry mixture, combining slowly, try not to over mix them together.  I found this dough to be quite light and fluffy.

Pour the batter into a pie dish, then sprinkle as many berries as desired on the top of the batter. Feel free to use whatever type of berry you would like.

Bake for 1hr at 350d. Once this is finished baking you can sprinkle the top with powdered sugar and place a few fresh berries as a garnish upon each piece you serve.

I hope you enjoy!! This goes SO well with coffee in the morning, or tea in the afternoon :)
