Ingredients
- Carrot matchsticks
- 1 Cucumber
- 1 Avocado
- 2 servings of Cod
- 1/2 cup Heavy Cream
- Salt and Pepper
- tsp of Lemon Juice
- Cajun Spice Blend
How To:
Pat dry Cod with paper towel and season with the Cajun spice blend, and set aside while your pan heats up. You can use any fish you have on hand such as tilapia. Half and pit your avocado and place into a blender along with the heavy cream and lemon juice. Blend until it creates a creamy whipped avocado sauce add salt and pepper to taste. Put oil into your hot pan and crisp up some of your carrot matchsticks. While they are getting crispy take your vegetable peeler and peel the cucumber length wise and then roll them into rolls. Once the carrots are crispy set them on a plate with a paper towel down to soak up any unwanted oil. Set your cod into the pan and let sit for 3-4 minutes then flip to cook and caramelize the other side.
If you would like your avocado cream warm you can warm up the cream in a pan prior to blending, I think its great cold because the Cod is spicy but its totally up to you.
To plate put avocado cream in the center of the plate and create a small circle. Set Cod in the center of the cream then place your cucumber throughout the cream. Top it all off with the crispy carrots.
