Leek and Potato Soup

For my birthday this year I got a Vitamix blender and it has been amazing!  If you have ever tried out a Vitamix you know how great they are.  The first time I used one was in my culinary class and I fell in love with how smooth it was able to puree food.

Leek and potato soup

Serves 3-4 people

  • 2 Big Leeks white and light green parts only
  • 3 Potatoes
  • 1 Tbs Oil
  • Chicken Stock
  • Chives for Garnish
  • Bacon for Garnish
  • 2 oz Heavy cream
  • Salt and pepper to taste

How to:

Cut and clean leaks, peel and dice potatoes.  Set leeks in a saucepan big enough to fit all of your ingredients add oil and a pinch of salt.  Sweat the leeks by putting them over a low flame with a lid, you do not want to caramelize them at all.  After sweating the leeks add the chicken stock and potatoes, you want to cover them with the liquid.  you can add any seasoning you would like, I added dill you could add rosemary or thyme.  The vitamix will blend down any of the herbs or seasonings.  Let it simmer on a medium low flame until the potatoes are tender.

 

Add your chicken stock and veggies to the Vitamix and blend until smooth.  Taste and check the consistency.  If its not thin enough add more chicken stock if its too thin put it back on the stove to reduce.  Add salt or pepper and any other seasoning you think it might need.

Add the cream and mix in the blender, you can also put it back on the stove and stir in the cream by hand if you do not want to mix it in the blender.

Notice in the pictures how smooth the soup became even the dried dill I added is completely gone.

You can now serve and garnish with your favorite topping.  Chives, bacon and croutons work really well with this soup.
