Balsamic Kohlrabi With Meatballs

Did you grow kohlrabi this year in your garden? They kind of look like an alien to me lol.

The leaf shoots coming off a large bulb that grows above the dirt is strange to look at and finding recipes for them is hard to do. They are similar in taste and texture to bamboo shoots in my opinion and I often substitute them in recipes for each other.

This recipe is super easy. first I pealed and cut my kohlrabi in a French cut (like a French fry). I also added in some fresh green beans that I had picked at the same time. I used my fry pan and a little oil, salt, and garlic. I cooked them covered for about 7 minutes, stirring occasionally. After they were soft and starting to put on some color I drizzled some balsamic vinegar on top and let them sit while I finished up some homemade meatballs.

My family loved this recipe and even kept eating the kohlrabi raw before I even got it into the pan. I hope you enjoy this recipe as well.
