Spending two years living in Costa Rica really gave me a taste for gallo pinto! This is a classic meal prepared for breakfast. It is delicious, full of flavor, and very easy to make!
Gallo Pinto
Chop cilantro, onion, and sweet pepper finely.
Add 1 tbsp olive oil to deep skillet or pan and dry fry the 2c of rice for 2 minutes on high.
Add chopped onion, sweet pepper, and cilantro, stir for 2 more minutes.
Add 3c of water or chicken broth to the rice, once it is brought to a boil place on simmer for 20-35 minutes and cover.
Add 1lb of black beans to the rice keeping ½-1c of the “black water” from the beans, the bean juice gives the rice color and flavor.
Then sauté in olive oil for a few minutes, sprinkle with fresh cilantro before serving.

1lb Black beans
8-10 Springs fresh cilantro
1 Small or medium onion
3 Cups chicken broth or water
2 Cups white rice
½ Tsp salt
1 Tbsp olive oil
1-3 Tbsp olive oil (for after you add the beans)
