Summer Salad Recipe

In the late summer I find so many good deals on fresh ingredients from the farmers market that I often over buy and do not know how to incorporate it all into my meals. Fresh salsa, fruit salads, roasted veggies, so many options! I thought I would share a super simple recipe that you can use with most any fresh veggies from your garden or farmers market.


Summer Salad Recipe:

  • Cucumber small dice
  • Red pepper small dice
  • Tomato small dice
  • Avocado Small Dice
  • Green onion
  • Fresh Basil
  • Sour Cream
  • Fresh Dill
  • Salt and Pepper
  • Lemon Juice


To make this salad you want to small dice all of your veggies so they can incorporate well together.  If you don’t have some of the ingredients that’s fine too you can mix it up with all types of veggies!

Combine your small diced veggies in a bowl, I did not put amounts on purpose because it can be made any size.  For me and my husband I made it with one cucumber, half of a red bell pepper, half of a tomato, half of an avocado, one green onion, a couple leaves of fresh basil and a small amount of fresh dill.  I combined it together in a bowl and added a squeeze of fresh lemon juice and a spoonful of sour cream.  You do not need much sour cream to cover the veggies just one small spoonful and then salt and pepper to taste.

You could also add this to the top of lettuce or kale, or add your own dressing instead of the sour cream.


Mix it all together try not to squish any of the veggies try to keep the avocado mostly in tact.  Then you can serve your summer salad! If you want it to look nice and fancy like the photos above use a ring mold or 1 cup measuring cup to make it look clean in one spot.   Pair this with your favorite meat and potato dish!
