Ingredients
- 2 bunches of basil
- Boiling water
- Ice bath
- Oil
- strainer with cheese cloth or fine mesh strainer
- Oil container
How To
Take your basil, leave it whole on the stems, the stems will add color and some flavor to the oil. Blanch the basil for 20 seconds in boiling water and then set in ice bath.
Put your basil into a food processor along with your oil. I have a small oil jar that I got at the dollar tree that I filled with oil and then used that amount to make this, its about one cup of oil. blend the basil with the oil for 20 seconds and then use a spatula to put into a small saucepan.
Warm up the oil, you do not want to boil it, just a simmer. This will infuse the basil flavor into the oil. Let it soak in the hot oil for about ten minutes.
After its done soaking take your strainer and cheesecloth and run the basil and oil through it to get rid of the basil pulp. be careful if your oil is still hot, you can wait for it to cool to strain if needed.
Pour into your oil container and serve with bread or with a meal. Basil goes so well with lots of different dishes so be creative! I used mine today with some Bruschetta!
